The Centre runs a nationally-accredited Commercial Cookery training program that covers all the theory and practical components of a three-year apprenticeship.
Benefits may include self-paced modules and recognition of workplace skills, which can reduce the study load and completion time of a course.
Many people already working in the Commercial Cookery Industry have gained their skills and knowledge informally, and on-the-job, rather than via a nationally-recognised apprenticeship. These people can often find it difficult to prove their skills when changing employers.
To assist this part of the workforce, the Centre offers a customised trade recognition process which allows people to gain a formal qualification in lieu of their years of on-the-job experience. This involves having a qualified assessor meet with the candidate. It can be done on-the-job, where the assessor can look at the candidate’s work (regardless of how, when or where the learning occurred) and also help them collect the evidence quickly, in order to gain a formal qualification or part qualification. The Centre can issue full Certificate III-level trade qualifications.
